Most of the coffee beans from civet cats are of the low-altitude Robusta variety, indicating the preference of civet cats for Robusta. Civet cats are nocturnal animals, particularly active at night, especially in the early hours of the morning. They rely on their acute sense of smell to choose the ripest, sweetest, and fullest coffee cherries on the coffee trees for consumption. After passing through their digestive systems, the fruits digest the outer skin and flesh, while the hard coffee beans contained within undergo subtle changes during fermentation in their intestines, resulting in a unique flavor that cannot be achieved by artificial processing. The civet cat excretes the beans with shells, which are then processed by drying, removing the outer shells, and finally roasting the coffee beans at high temperatures before being brewed using various methods.
